Smashed Chickpea Sandwiches

What better way to spend a Wednesday Eve (my one day off from classes!) than with some delicious smashed chickpea salad sandwiches (once again from one of my most favoritest blogs ever: the smitten kitchen.)

These were everything a busy gal could love: easy, affordable, delicious, AND healthy (speaking of health insurance… as vegetarians we are far LESS likely to need it than you red meat eaters…. sorry, family!) Plus after seeing the wonderful movie “Cold Souls,” we have an appreciation for chickpeas that most others could never understand without seeing the flick. (Go see it)

Here’s the recipe and the deets!

Smashed Chickpea Salad
Inspired by Smitten Kitchen
1 15-ounce can chickpeas, drained and rinsed
2 tablespoons pitted, halved and very thinly sliced black olives– I omitted these because I hate hate HAAATTTEEE olives.
1.5 tablespoon finely chopped red onion
1 tablespoon chopped fresh parsley
Zest and juice from half a lemon
Salt to taste
Black pepper to taste
1 T of olive oil

Mix everything but the olive oil in a small to midsize bowl. Very lightly smash the chickpea mixture with the back of a fork or a potato masher… I used potato masher and it was lovely. Add the oil (more if you’re into it) and mix.

We served this as a sandwich on toasted bread (Healthy bread from Union Market on 7th Ave in Brooklyn) with roasted red pepper and a tahini spread made from 2 TBSP tahini, 1 tsp lemon juice and one garlic clove put through a press.)
